You will need:

  • 2 large chicken breasts
  • ½ bottle Levi Roots Reggae Reggae Tomato Ketchup
  • 2 tbsp vegetable oil ; 100ml single cream
  • 50g mushrooms - sliced
  • 1 head broccoli - cut into florets
  • 2 carrots - cut into strips
  • 250ml double cream
  • 2 large baking potatoes - peeled & sliced very thinly
  • 1 clove garlic - finely chopped ; Salt & pepper to season

Turn on the oven and heat to 200°C Heat the oil in a frying pan and add the chicken breasts, fry each side lightly until they start to go brown, add the sliced mushrooms and transfer it all to a casserole dish.

In a separate dish mix the Reggae Reggae Tomato Ketchup with the single cream and pour over the chicken in the casserole dish.

In the casserole dish layer the potatoes and sprinkle over the garlic, cover with double cream & season well.

Place in the oven and bake at 200°C for approx 45 minutes.

After the chicken has been in the oven for 20 minutes, slowly bring a pan of water to the boil and add the broccoli & carrots Simmer until tender and drain Remove the chicken and potato dish from the oven and carefully place a portion of each on a plate. Add some tender broccoli and carrots and serve to your loved one. Enjoy!
