Levi's Special Stuffed Peppers

You will need:

  • 4 Sweet Red Peppers – cut in half and seeds removed
  • 100g Basmati Rice - cooked
  • Sprig Mint - chopped
  • Sprig Basil – chopped
  • 1 Red onion – finely diced 
  • 1 clove garlic – crushed
  • 75g Mushrooms – sliced
  • 1 Leek – diced
  • Sea Salt and Cracked Pepper
  • Olive oil
  • 1 squeezy bottle Reggae Reggae Tomato Ketchup
  • 1 Pack Buffalo Mozzarella - sliced

Serves 4

What to do:

Heat the oil in a pan and fry off the onions, garlic, mushrooms and leek. 

Add to the cooked rice along with 5tbsp Reggae Reggae Tomato Ketchup, stir well.

Add the chopped herbs and check seasoning.

Place the halved peppers on a baking tray and generously fill with the rice mixture. Add a couple of slices of cheese to each.

Drizzle with a little olive oil and bake in the oven at 200˚C for approx 20-25minutes.

Remove the peppers from the oven, serve with a salad and a good drizzle of olive oil.
