Levi’s Lamb Leaves – a quick and easy starter

Levi’s Lamb Leaves

You will need:

• 250g minced lamb

• 2 tbsp olive oil

• ½ red onion – finely diced

• 1 bunch spring onions – finely chopped

• 1 carrot – finely diced

• ½ bottle Reggae Reggae sauce

• 2 little gem lettuces – separated into leaves

Serves 4

What to do:

To put some music in your food, do this…

• heat the oil in a pan and add the lamb, fry off for 3 minutes then add the onion and carrot for a further 2 minutes

• stir in the Reggae Reggae sauce and simmer for 1 minute

• arrange the leaves on a plate and top each with a couple of spoonfuls of the lamb mixture, top off with a coriander leaf and serve
