Quick, easy and guaranteed to impress!
Place the diced potatoes into a pan of boiling salted water and bring back to the boil, leave to simmer for approx 20 minutes.
Heat the oil in a pan & carefully add the chunks of chicken.
Add the carrot, broccoli, peas & thyme to the pan and lightly sauté. Pour over the jar of Caribbean Stew Sauce and simmer for 5 minutes.
Take a casserole dish pour in.
Place in a pre-heated oven at 220°C. Bake for approx 20 minutes.
While the chicken is in the oven, remove the potatoes from the boil and drain. Mash with a little butter and black pepper until smooth and creamy.
Serve a dollop of mash with a good spoon of the stew and enjoy!
